Tasmanian Heartwood Malt Whisky Pty Ltd & Tasmanian Independent Bottlers Pty Ltd currently has 40,000+ litres of whisky stored in oak barrels ranging from 100 to 300 litres in volume.

The whiskies are maturing in a variety of barrel types including French, American and Hungarian oak. They also include barrels previously used for bourbon, Australian muscat, port, rum and sherry, Spanish PX and Portuguese Port.   Resultant whiskies originate from 20 different distilleries in Australia and New Zealand that produce 25 different new make spirits. The barrels are sources from seven different cooperages.

Not only do we produce aged single malts we produce vatted or blended malt whisky. Due to the variety of barrels and whisky styles we can blend to our hearts desire producing a wide range of whisky experiences.

The collection commenced in 1999 and continues today where we have control and input into every stage of the whisky's development.

We are there to determine the amount of peat used for production. We are there when the spirit is produced. We are there to select the barrel. We are definitely there to sample the whisky as it matures.

We do not have commercial drivers. The quality of the whisky produced is the most important aspect of our endeavours. The whisky will be bottled when it is ready. If it is really, really, good, we might just keep it for ourselves (to be shared with friends).

The new make is purchased and selected based on its texture and flavour profile. It is then matched to a specific barrel type. Currently we have selected 13 barrel types for maturation of the spirit including:

  • Bourbon
  • Muscat
  • Botrytis
  • Virgin oak
  • Re-educated 2nd fill
  • Tokay
  • PX
  • Rye (soon)
  • Whisky beer
  • Also we have oats, rye, apple spirit and soon rum

The whisky is matured in our own bond store south of Hobart.  It is carefully monitored by the dark angel and will be released when it is ready.
